Camera Aim Point

I've been playing with Pitch and Yaw, which rotates the camera on the spot; I'm trying to lock the camera aim-point onto a Pin to achieve a tilt and orbit effect.

Is there any way of getting access to the camera aim point or is there no such entity?

I’ve also noticed that the zoom is always focused on the centre of the map, rather than tracking the mid point between two contacts, is there an easy solution to fixing this?

It is possible to use an orbit-style camera, but it involves some detailed coding with the VE3D API and the VEMap.GlobeControl.  Take a look at the API docs:
